Easy Fresh Lumpia Recipe

I. Introduction

Crisp, unfried spring rolls filled with fresh vegetables, shrimp, or tofuโ€”served with a sweet garlic dipping sauce. This Easy Fresh Lumpia Recipe offers a healthy and refreshing appetizer that’s perfect for warm weather or as a light snack.

II. Ingredients

  • 12-15 fresh lumpia wrappers (or rice paper)
  • 1 cup lettuce leaves, shredded
  • 1 large carrot, julienned
  • 1/2 cup fresh bean sprouts
  • 1/2 cup green beans, julienned
  • 1/4 lb shrimp, cooked and sliced (optional)
  • 1/4 cup firm tofu, sliced (optional)

III. Equipment

  • Mixing bowl
  • Cutting board
  • Small pot (for sauce)
  • Small bowl for water
  • Sharp knife

IV. Instructions

  1. Prepare all vegetables and proteins by julienning and slicing them into thin strips.
  2. Blanch the green beans and carrots briefly in boiling water, then transfer to ice water to keep them crisp and bright green.
  3. Place a lumpia wrapper on a clean surface with one corner pointing toward you (diamond shape).
  4. Pile a small amount of vegetables and protein in the center of the wrapper.
  5. Fold the bottom corner over the filling, then fold in the sides and roll tightly.
  6. Seal the edge with a bit of water.
  7. Repeat with remaining wrappers and filling.
  8. Serve immediately with sweet garlic dipping sauce.

V. Tips

Keep filling dry to prevent soggy wrappers; roll just before serving. Cut vegetables uniformly for easier rolling. Don’t overfill or the wrappers may break. The rolls are best eaten fresh but can be prepared a few hours ahead if kept covered with a damp cloth.

VII. Storage
