  • 1/2 cup butter, melted
  • 1/2 cup pastillas crumbs or powder

  • 1/4 cup grated cheese (optional)
  • Banana leaves for lining (optional)

  • Clay pot or oven-safe dish (if traditional bibingka pot not available)

IV. Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. If using banana leaves, line the baking pan with them and brush with oil.
  3. In a large bowl, mix glutinous rice flour, sugar, and salt.
  4. In another bowl, whisk eggs, then add melted butter and coconut milk.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  6. Pour half of the batter into the prepared pan.

V. Tips

Use store-bought pastillas for convenience. You can also crush pastillas in a food processor or with a rolling pin to make your own crumbs. The pastillas adds a unique milky, sweet flavor that contrasts beautifully with the savory notes of the traditional bibingka. If pastillas aren’t available, you can substitute with condensed milk mixed with a little flour to make a similar texture.

VI. Serving

Warm, during Christmas or as a special merienda. This delightful fusion dessert is perfect for special occasions when you want to surprise guests with something unique. The combination of the chewy rice cake texture with the sweet pastillas flavor creates a memorable taste experience.

VII. Storage

Keeps 2 days refrigerated; best reheated. Store in an airtight container in the refrigerator. To reheat, either microwave for 30-60 seconds or warm in the oven at 300ยฐF for 10-15 minutes. The texture may change slightly after storage, but the flavors will still be delicious.
