Easy Chicken Kebabs Recipe

I. Introduction

Marinated chicken skewers grilled or pan-seared for a smoky, flavorful dish with Middle Eastern-Filipino flair. This Easy Chicken Kebabs Recipe combines tender chicken with aromatic spices and vegetables, creating a perfect dish for outdoor grilling or a quick weeknight meal.

II. Ingredients

  • 1.5 lbs chicken breast or thigh, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tbsp calamansi juice or lemon juice
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 large bell pepper, cut into chunks
  • 1 large onion, cut into chunks
  • Wooden or metal skewers

III. Equipment

  • Metal or wooden skewers
  • Grill or grill pan
  • Mixing bowl
  • Knife and cutting board
  • Measuring spoons

IV. Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a bowl, combine soy sauce, calamansi juice, garlic, olive oil, cumin, paprika, and pepper to make the marinade.
  3. Marinate chicken cubes for at least 30 minutes (or up to 4 hours for deeper flavor).
  4. Preheat grill or grill pan to medium-high heat.
  5. Thread chicken and vegetables alternately onto skewers.
  6. Grill kebabs for 10-12 minutes, turning occasionally until chicken is cooked through.
  7. Internal temperature should reach 165ยฐF (74ยฐC).
  8. Serve hot with rice or pita bread.

V. Tips

Baste with marinade while grilling; use thigh meat for juicier kebabs. Cut chicken and vegetables into uniform sizes for even cooking. Don’t overcrowd the skewers to allow proper heat circulation. If grilling, oil the grates to prevent sticking. For extra flavor, you can also add mushrooms or pineapple chunks.

VI. Serving

With atchara, rice, or flatbread. These colorful kebabs make for an impressive presentation and pair wonderfully with Filipino sides like atchara or with Middle Eastern accompaniments like tzatziki. They’re perfect for outdoor gatherings or as a main dish for dinner.

VII. Storage

Best served fresh; leftovers last 2 days refrigerated. Store in an airtight container and reheat in a skillet or microwave. The skewers are best enjoyed immediately after grilling when they’re at their peak texture and flavor, but they make good leftovers when properly stored.
