Easy Fresh Lumpia Recipe

II. Ingredients
- 12-15 fresh lumpia wrappers (or rice paper)
- 1 cup lettuce leaves, shredded
- 1 large carrot, julienned
- 1/2 cup fresh bean sprouts
- 1/2 cup green beans, julienned
- 1/4 lb shrimp, cooked and sliced (optional)
- 1/4 cup firm tofu, sliced (optional)

IV. Instructions
- Prepare all vegetables and proteins by julienning and slicing them into thin strips.
- Blanch the green beans and carrots briefly in boiling water, then transfer to ice water to keep them crisp and bright green.
- Place a lumpia wrapper on a clean surface with one corner pointing toward you (diamond shape).
- Pile a small amount of vegetables and protein in the center of the wrapper.
