Easy Sipo Eggs Recipe

I. Introduction

A quick Filipino omelet with tomatoes, onions, and sometimes shrimp or porkโ€”simple, protein-packed, and satisfying. This Easy Sipo Eggs Recipe (also known as Telur Gulung in some regions) offers a delicious and quick meal that’s perfect for breakfast or merienda.

II. Ingredients

  • 4-5 eggs
  • 2 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp cooking oil
  • Salt and pepper to taste
  • 2 tbsp water or milk (optional, for fluffiness)
  • 2 tbsp shrimp or ground pork (optional)

III. Equipment

  • Suitable skillet or frying pan
  • Whisk or fork
  • Knife and cutting board
  • Mixing bowl

IV. Instructions

  1. Crack eggs into a bowl and beat until well combined.
  2. Add water or milk if desired for a fluffier omelet, and season with salt and pepper.
  3. Heat oil in a skillet over medium heat.
  4. Sautรฉ garlic and onions until fragrant and translucent.
  5. Add tomatoes and cook until they start to break down.
  6. Add shrimp or pork if using, cooking until just done.
  7. Pour in the beaten eggs, stirring gently as they begin to set.
  8. Continue cooking until eggs are set but still tender.
  9. Flip or fold the omelet as preferred and serve immediately.

V. Tips

Don’t overbeat eggsโ€”keeps omelet fluffy; add a splash of milk for richness. The key is medium heat to prevent the bottom from overcooking while the top remains runny. Add a pinch of ground black pepper for extra flavor. Sipo eggs are best eaten fresh and warm, which is why they’re popular as a quick breakfast.

VI. Serving

With rice for breakfast or merienda. This versatile egg dish pairs wonderfully with steamed rice and a cup of coffee or tea. It’s often served alongside other Filipino breakfast items like tocino or longganisa, or simply as a quick snack with bread.

VII. Storage

Best eaten fresh; leftovers keep 1 day. Store covered in the refrigerator and reheat in a pan over low heat to maintain texture. The eggs may become slightly rubbery when reheated, so it’s best to make only what you can eat right away.
