Easy Leche Flan Recipe

I. Introduction

A classic Filipino caramel custard dessert made with egg yolks and sweetened condensed milk. This Easy Leche Flan Recipe is the perfect ending to any Filipino meal, with its rich, creamy texture and sweet caramel sauce.

II. Ingredients

  • 12 egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 1 tsp vanilla extract (optional)

III. Equipment

  • Flan mold or ramekins
  • Metal skillet or pan for caramel
  • Mixing bowls
  • Whisk or fork
  • Measuring cups and spoons
  • Steamer or large pot with rack

IV. Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. For caramel: In a small pan, heat sugar and water over medium heat.
  3. Cook until sugar dissolves and turns amber in color.
  4. Quickly pour the caramel into your flan molds, coating the bottom.
  5. In a mixing bowl, whisk together egg yolks, sweetened condensed milk, evaporated milk, and vanilla.
  6. Strain the mixture to remove any lumps or foam.
  7. Pour the mixture over the caramel in the molds.
  8. Cover molds with foil and place in a steamer or large pot with water.
  9. Steam for 30-40 minutes or until a knife inserted comes out clean.
  10. Cool completely, then refrigerate for at least 3 hours before serving.

V. Tips

Strain the custard mixture to ensure smooth texture; don’t overcook or it will curdle. The water bath (or steaming) is crucial for achieving the right texture. Use only egg yolks for the traditional rich texture. The caramel should be cooked to amber color but not burnt, or it will taste bitter.

VI. Serving

Invert onto a plate to reveal the caramel sauce. This dessert is best served chilled and is commonly enjoyed during special occasions, fiestas, and celebrations. It’s often served after the main meal as a sweet ending to a Filipino feast.

VII. Storage

Keep refrigerated for up to 1 week. The leche flan actually improves in flavor after a day in the refrigerator. Cover with plastic wrap to prevent the custard from absorbing other odors in the fridge. To remove from mold, run a knife around the edges before inverting.
