II. Ingredients

  • 2 lbs fresh ube (purple yam) or 2 cups ube powder mixed with water
  • 1 can (14 oz) sweetened condensed milk
  • 3 tbsp butter
  • 2-3 tbsp dark rum
  • 1/2 cup sugar (adjust to taste)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

III. Equipment

  • Large non-stick pan
  • Wooden spoon or spatula
  • Grater or food processor (if using fresh ube)
  • Measuring cups and spoons
  • Strainer (if needed)

IV. Instructions

  1. If using fresh ube, peel and grate the yam, or cook whole until tender then mash.
  2. In a large non-stick pan, combine grated ube, condensed milk, and butter.
  3. Cook over medium-low heat, stirring constantly to prevent sticking.
  4. Add sugar and continue cooking until the mixture thickens (about 20-25 minutes).
  5. Stir in rum, vanilla, and salt near the end of cooking.

Use real ube (not extract) for best color and flavor; add a splash of vanilla for complexity. Fresh ube provides better color and texture, but ube powder mixed with water can be used as a substitute. VII. Storage

Keeps 2 weeks refrigerated in an airtight jar. Store in clean, dry containers to prevent contamination. The jam may form a skin on top when stored but this is normal. Simply stir before using. The alcohol in the rum helps preserve the jam, but it will keep best in the refrigerator.
